They are selectively harvested by hand at a minimum of 95° Oechsle. The yield is therefore deliberately kept very low. Böhme \u0026amp; Töchter allow the Weissburgunder Edelacker to ferment spontaneously on the skins. It then matures for almost a year in equal parts in large oak and steel tanks.
