During this time, almost half of the wine evaporates. This is one of the reasons for its high price. The oxidative Vin Jaune is made exclusively from the Savagnin grape variety. It tastes somewhat like a sherry. A major difference is that Vin Jaune is not fortified. Bourdy's Vin Jaune is very lively, with high acidity, minerality, and rather restrained oxidative notes. It displays mature nuances of toasted grain and herbs, and is very clean and straightforward. We enjoy it in small sips over the course of perhaps a week to fully understand it gradually.
